Autumn Squash
Autumn is a gorgeous time of health. The leaves are changing; we skip outside to breathe in the Fall colors and then skip in to make exciting healthy foods. I love to use shitake mushrooms with roasted garlic this time of year to boost my immune system and dine deliciously! I usually make a big batch and then freeze it in cubes. It makes it very easy to add to soups or sautéed vegetables for a healthy meal.
Autumn squashes are exceptionally full of nutrients. Adding butternut, acorn, and spaghetti squash vegetables will build immunity and increase eye and skin health.
Try roasting your cruceriferous vegetables for a sweeter more mellow flavor. My favorite right now is roasted cauliflower and garlic with fresh squeezed lemon. If you are raw vegan, you can dehydrate, than garnish with a lovely marinade.
Brightening a vegetable’s flavor with lemon is a favorite twist of mine!
